小黑麦酿造品质受开花期外源GA3调控的研究

Regulation on Triticale Brewing Quality After GA3 Application on Blossom Period

  • 摘要: 为改善小黑麦作为啤酒原料的酿造品质,以小黑麦东农8809和东农95-6654为试验材料,研究开花期外源喷施赤霉素对小黑麦酿造品质的影响,结果表明,田间状态下,开花期穗部外源喷施赤霉素可影响小黑麦制麦特性,并调控酿造品质。当赤霉素喷施浓度为10mg/L、20mg/L时,小黑麦籽粒千粒重最高,显著高于30mg/L处理及对照;外源喷施赤霉素处理后,小黑麦籽粒α-淀粉酶活性提高,这可加快淀粉水解,提高淀粉分解为可发酵糖的能力,从而改善小黑麦的酿造品质。综合本研究结果认为,采用外源喷施赤霉素以改善小黑麦酿造品质是可行的,以20mg/L的赤霉素喷施浓度麦芽质量最高

     

    Abstract: The triticale varieties Dongnong 8809 and Dongnong 95-6654 were chosen as experimental materials to study the effect of application of exogenous GA3 on brewing quality. The results indicated that exogenous GA3 can affect the manufacturing and brewing quality. The 10mg/L and 20mg/L GA3 may improve the 1000-grain weight, which is higher than 30mg/L treatment and CK significantly. Triticale grain of α-amylase activity for starch hydrolysis was improved, which can accelerate the ability of the decomposition from starch to fermentable sugars. The paper showed that spraying exogenous GA3 can improve triticale brewing quality. The 20mg/L GA3 is benefit for the highest malt quality.
